Cream Cheese Lasagna with Bell Pepper Rings

 Another Southern Living Classic.

 


 

Ingredients:

2 lbs ground beef

1/2 cup chopped onion

1 (6 oz) can tomato paste

3/4 can of (16 oz) tomato sauce

1/3 cup water

1 T dried parsley

3 t Italian seasonings

1/2 t garlic powder

1 1/2 t beef bouillon  granules

1 (8oz) package of cream cheese, softened

1/4 cup sour cream

1 cup whole fat cottage cheese

10 oz pepperoni

2 cups shredded mozzarella

1/2 cup Parmesan cheese, grated

6 Green pepper rings  


Directions:

Cook beef and onion in a heavy skillet till brown; drain. Stir in tomato paste, tomato sauce and spices. Cook over low heat for 10 minutes.

Combine cream cheese, sour cream, cottage cheese and eggs. Mix well.

Layers: 2 layers

1/2 Noodles

1/2 Cheese mixture

1/2 Pepperoni

1/2 Meat sauce

1/2 Mozzarella

Top with Parmesan cheese.

Cover and bake at 350 degrees for 30 minutes. Remove cover and place bell pepper rings on top and bake uncovered for 5 minutes more.  

Let stand 10 minutes before serving.

Pot Roast with Sour Cream Gravy

Another Southern Living classic.


 Ingredients:

1 (2-2 1/2 lb) boneless chuck roast

2 T vegetable oil

1/2 cup water

4 medium potatoes, peeled and quartered

3 medium onions, quartered

3 medium carrots, peeled and cut into 2" pieces

1 T flour

1 (8 oz) carton of sour cream

S&P

 

Directions:

Sprinkle roast on all sides with S&P.

Brown on all sides in hot oil in a large Dutch oven. Add water. Cover and reduce heat and simmer 2 1/2 hours.

Add vegetables and simmer 30 minutes until vegetables are tender. Adding additional water if needed.

Remove roast and vegetables to serving dish.

Drain off dripping into a measuring cup, leaving 2 T of drippings in pan.

Stir flour into drippings and cook until thickened and browned. Stirring constantly add remaining dripping to make 1-cup of gravy. Add sour cream and S&P to taste.

Serve gravy on the side.

We serve this with popovers or brown and serve rolls.
