Guest Post - Jeff's Coon Ass Shrimp and Grits

 

This is my own version of Carolina style shrimp and grits.   From 2008.

Grits:

1 cup Yellow old-fashioned grits

2 cups chicken stock

1 cup cream

1 cup of water

salt to taste

butter if ya want

1 cup shredded cheddar cheese

Boil the salted water/stock/cream.  Add grits, stir, put the top on.  Cook on low heat for 20+ minutes (stir every few minutes). Once the grits are done add about 1 cup cheddar cheese (shredded) stir till it is melted.

 

Shrimp:

 1 lb peeled deveined shrimp

1 small onion

Couple of cloves of chopped garlic (more if ya like garlic)

2 links hot Cajun sausage (cut into oval slices)

Tony's seasoning (to taste)

 While the grits are cooking, sauté the sausage on medium high heat.  When browned, remove and drain on paper towels.  Now add some butter, and the onion and garlic....sauté that a couple of minutes...add the shrimp, sauté them till they are pink on both sides....do not overcook.  Once the shrimp are done, you are ready to serve.

Spoon the cheese grits into a bowl or plate.....throw a buncha sausage in the grits.....add shrimp/onion mixture over the top.

Watch out, this is highly addictive....
