Ingredients:
2 T olive oil
1 small red onion, small dice
10 dried apricots, coarsely chopped
1/3 cup slivered almonds, toasted
1 cup couscous
1 1/2 cups heated chicken stock
Zest of 1 lemon
2 green onions chopped
1/2 cup fresh mint leaves, roughly chopped
1/2 each of S&P
Directions:
In a medium sauce warm the olive oil. Saute the red onion and apricots until the onion is clear. Add the couscous, stir then add the warm chicken stock. Stir and add lemon zest. Cover and let stand for 10 minutes then add green onions and mint. Fluff and season with S&P.
