This smoked fish dip recipe has been our faithful companion through
three Gulf Coast states, and it never fails to remind us why we love
coastal living. The smoky redfish combined with chopped vegetables and
that hint of Cajun seasoning creates this incredible flavor that's both
sophisticated and comforting. It's pure Gulf Coast tradition in every
bite."
Ingredients:
1 pound smoked redfish or any white smoked fish
1/2 cup mayo
4 scallions chopped (use white and light green part)
1 stalk celery, diced fine
1 T capers
1 T lemon juice
1/4 cup chopped Italian parsley
1/4 t or more of Cajun seasoning
Saltine Crackers, to serve
Directions:
Place fish in a medium sized bowl, stir to break up, add all ingredients (except crackers) and mix well. Let stand for at least a half hour for flavors to meld. Add a 1/4 t of salt and 1/4 t of pepper if needed.
