BBQ Sauce

 Cast of Characters:

 


 This recipe is so easy and so good. Keep a squeeze bottle of this sauce in your fridge.

 Ingredients:

1 (15 oz) can tomato sauce 

1/4 cup + 1 Tablespoon brown sugar

1/4 cup apple cider vinegar

1/4 cup molasses

1 tsp liquid smoke

2 T Worcestershire sauce

1 tsp onion powder

1 tsp ground mustard

1/2 tsp smoked paprika

1/4 tsp cayenne

1 tsp salt

Directions:

In a medium saucepan, add all ingredients and simmer over low heat for 15 to 20 minutes.

Cool and served immediately or store in a squeeze bottle or mason jar in the fridge for up to two weeks.

For a thicker sauce, use ketchup instead of tomato sauce.

Ina's Mustard Roasted Fish

 

 From Ina's cookbook Back to Basics

 Ingredients: 

4 (8oz) fish fillets (we use salmon)

S&P

8 oz creme fraiche

3 T Dijon mustard

1 T whole-grain mustard

2 T minced shallots

2 teaspoons drained capers

 Directions:

Place fish in an oven proof baking dish, skin side down.

Sprinkle with S&P.

Combine the creme fraiche, two mustard's, shallots, capers and 1/2 teaspoon of pepper in a small bowl.

Spoon the sauce evenly over the fish, making sure the fish is completely covered.

Bake for 12 minutes, until it is barely done.

Be sure not to overcook! Serve with the sauce.
