Black Bean Salsa

 Back when we got recipes from actual newspapers! I cut this out sometime in the '90s and it's been a constant in my kitchen ever since. It's amazing how fresh cilantro, lime juice, and a good jar of salsa can transform a simple can of black beans into something delicious. this great for game night or potlucks. 

Ingredients:

1 16oz can black beans

1 20oz jar of medium salsa (or your choice)

1 large garlic clove

1 bunch of fresh cilantro  

2 Tablespoons fresh lime juice

Pinch of sugar

1/2 teaspoon cumin

 Directions:

In a blender or food processor combine garlic and cilantro. Chop fine. Add the black beans, salsa, lime juice, sugar and cumin. Pulse until beans are just chopped. About 20 seconds.

Serve with blue, yellow and white corn chips.
