Ingredients:
1 small bag of baby spinach leaves, stemmed and coarsely chopped
1 Tablespoon garlic/herb butter
1/2 teaspoon seasoned salt or Slap Ya Mamma (We use Penzy's)
1 (24 oz) refrigerated mashed potatoes (Bob Evans is good)
Directions:
Chop the spinach and place it in a large microwave-safe bowl. Add the butter and seasoned salt and microwave on high for 2 minutes.
Stir in potatoes and microwave for 2 minutes and stir then microwave for an additional 2 more minutes until hot.
Stir and serve.
