New Year Day - Spicy Black-Eyed Pea Fritters

These spicy black-eyed pea fritters have been our New Year Day tradition for the last 10 years, and for good reason - they're absolutely delicious and bring good luck too. The jalapeƱo adds just the right amount of heat, while the cheddar cheese makes them rich and satisfying. 

 


 Ingredients:

2 T olive oil or Tallow

2 T butter

1 egg

15 oz can black- eyed peas, drained and mashed

1 seeded and chopped jalapeno

1/3 cup shredded cheddar cheese

1/4 t salt and pepper

3 T all-purpose flour

Directions:

In a medium bowl beat egg with a fork and add the drained black-eyed peas. Mash peas with a pastry cutter or fork. Add remaining ingredients and mix well.

 In hot oil and butter, scoop a large spoonful (I use a gumbo/soup spoon) into the oil. Flatten the mounds with a spatula and cook for 2-3 minutes. Flip fritters and cook until done. Another 2 or 3 minutes. Transfer to paper towels to drain.

Serve with Sriracha, if desired.
