Great for brunch or any time you want something special, this smoked salmon quesadilla is truly outstanding. The creamy cheese mixture with chunks of smoked salmon creates incredible flavors, and that chipotle-lime sauce takes it to the next level with its smoky heat. It's elegant enough for entertaining but simple enough to make any weekend morning feel special.
For the Chipotle Sauce:
½ Cup Sour Cream
2 T Chipotle Peppers in Adobo Sauce, minced
2 T Lime Juice
S&P
Mix in a small bowl and set aside.
For the Quesadilla:
¼ cup of Cream Cheese, softened (20 seconds in the microwave works)
½ Cup Crumbled Feta
2 Tablespoons of chopped green onion (white and green part)
Tortillas (6 8-inch)
Package of Smoked Salmon, chopped
Directions:
For the quesadilla mix the cream cheese, green onion and Feta until blended. Spread a few tablespoons over 1 of the tortillas. Add chopped smoked salmon and place another tortilla on top.
Place in hot skillet and cook until light brown and cheese has melted. Flip and cook for a few minutes more.
Slice into quarters.
Serve with the chipotle sauce on top and garnish with cilantro.
Serves 3 or 4
